Our take on a gin and tonic – a refreshing summer spritzer with or without the gin. Use any greens powder you have on hand.

Time: 5 minutes
Ingredients:
- 1 English cucumber, roughly chopped
- 3 tbsp Green Blend
- 2 tbsp simple syrup (optional)
- 4 8-oz bottles tonic water
- 6 oz gin (optional)
- 2 tbsp raw honey
- 2 tbsp coconut sugar
- Cucumber slices and thyme, as garnish
Directions:
- Prepare the greens mixture by adding the cucumber to a high speed blender and blending until liquified.
- Use a strainer or cheesecloth to strain the cucumber liquid from the fibre/pulp into a mixing bowl. (Save the pulp for smoothies or tzatziki).
- Add Green Blend and simple syrup to the bowl and whisk well.
- Chill 4 cocktail glasses. Add the honey and raw sugar to separate plates and spread evenly. Dip each glass in honey, then sugar to rim.
- Add 3 tbsp greens mixture to each glass, then fill with ice. Pour gin and tonic water over top and serve with garnish.
