Banana Split Chia Pudding

Ingredients

½ cup + 2 tbsp oat milk
2 tbsp chia seeds
1 tsp Udo’s 3+6+9 Oil Blend
1 banana, sliced
½ tbsp coconut oil
3 tsp maple syrup

Instructions

  1. Combine chia seeds, oat milk and Udo’s Oil in a glass jar. Stir and set aside.
  2. Heat coconut oil over medium heat in a skillet. Add sliced banana and maple syrup. Let the banana caramelize, then flip each slice over to check that they’ve browned on the under side. This is a sign they’ve gained some caramel flavour. Let the other side caramelize, which should take half as long as the first side.
  3. Remove from heat and using a fork, mash half of the banana slices. Reserve the other half, leaving them sliced. Add the mashed banana to the chia mixture and stir well. Refrigerate for 30 minutes or overnight.
  4. Serve with reserved caramelized banana slices and brown sugar.
