Pumpkin Pie Energy Bars

Makes 6-8 bars

Ingredients:

  • ½ cup cashews
  • ½ cup pumpkin seeds
  • ½ cup rolled oats
  • 2 tbsp pumpkin purée
  • 2 tbsp almond butter
  • 2 tbsp Manuka Honey
  • 1 tsp pumpkin pie spice or cinnamon

Directions:

  1. Add all ingredients to a blender or food processor.
  2. Blend until combined. Press mixture into an even layer in a parchment-lined pan.
  3. Freeze for 10-15 min. Cut into bars and enjoy! Store in the fridge or freezer.
